I forgot to eat lunch again.
This has been common with me lately. The kids get fed, work gets done, but at about 3:30 in the afternoon I realize I had a cup of coffee for breakfast and a handfuls of my kid’s goldfish crackers for lunch.
Not good.
So in an effort to make sure I get a little something for lunch I’ve been trying to make a few things ahead that are as mindless to eat as a handful of goldfish -only tastier and healthier.
A friend of mine turned me on to this salad a couple years ago and it’s perfect because it’s almost effortless and it tastes better after marinating in the fridge a bit.
Easy White Bean Salad
Ingredients:
- 1 can of white beans
- 1 lemon
- handful of parsley
- red onion
- tomato (optional)
- olive oil
- salt and pepper to taste
Directions:
The prep is easy, rinse your white beans well, and toss in a bowl (or straight into storage container) with parsley and chopped onion and tomato if you have it. The original recipe did not include tomato but I got some beautiful tomatoes in my Farm Table box I wanted to use. Sprinkle with lemon juice (I used about a half of lemon, olive oil and salt and pepper and pop it in the fridge.
I made (and photographed) this super healthy salad this morning while my coffee was percolating so today I have absolutely no excuse for not eating lunch. I like that it doesn’t have any bad-for-you stuff added from bottled dressings. Serve it on a bed of lettuce, as a side with a sandwich, or just eat it straight from the container which is what I will probably be doing.
