One of the more challenging things parents face during the week is figuring out what dinner is going to be. Eating out or take-out are always an option but the cost can really add up. You can cook something but it might take too much time while requiring a billion ingredients. Keeping this in mind, we have come up with a chicken enchilada recipe that only requires 5 ingredients and can be made in just 45 minutes! Meal time this week just got interesting!
Chicken Enchilada
A quick and easy chicken enchilada recipe to spice up dinner time! The best part is that it only requires 5 ingredients!
Preheat oven to 375°.
In a large bowl, combine the shredded chicken, 3/4 cup of enchilada sauce, and 1 1/2 cup of cheese.
Spread 1/2 cup of enchilada sauce in a 13x9 baking dish.
Spoon about 2 tablespoons of black beans and 4-5 tablespoons of the chicken mixture into each tortilla.
Roll up and place the seam side down in the baking dish.
Once all the tortillas are placed in the baking dish, spread the remaining enchilada sauce and cheese over the top.
Bake for about 25 minutes or until the cheese has been melted.
