We make pancakes in our house pretty often, but the bummer about pancakes is that one person ends up in the kitchen flipping pancakes and not sitting down with the rest of the family. On a normal weekend morning that’s not a big deal, but on Christmas morning it’s nice if everyone can sit together… which made me wonder if you could just bake the pancakes.
… and it turns out you can.
I went to MARTIN’S and picked up the ingredients for these baked apple pie pancakes and we are DEFINITELY making them again for Christmas morning.
You can make the pancakes ahead of time and keep them in the fridge, the rest of the process is easy peasy.
You’ll need:
- About 12 premade pancakes
- One can of apple pie mix
- For the topping
- 1/2 cup butter
- 3/4 cup brown sugar
- 3/4 cup of oats
- 1/2 cup of flour
- A dash of cinnamon
- a dash of salt
Preheat the oven to 350. Line a greased casserole dish with pancakes cut in half.
Spread apple pie mix evenly over the pancakes tucking some apples in between slices and set aside.
Mix your dry ingredients for your topping in a medium sized bowl then cut in butter mix into a crumbly mixture and top your apples.
Slide the whole thing in the oven for 45 minutes and serve hot.
